Ningen-cho Imahan is a renowned sukiyaki restaurant that uses fu (wheat gluten cake) as one of the key ingredients in their sukiyaki. This product recreates the restaurant's own "Chojifu" — a shaped, baked wheat gluten made from wheat protein (gluten) and wheat flour — in a home-friendly format. While the original Chojifu requires about 3 hours of soaking to rehydrate, this version has been developed specifically to reduce that time to approximately 1 hour, making it easy to enjoy at home. The gluten soaks up the umami of the meat and sukiyaki broth, and has a springy, chewy texture similar to fresh nama-fu.

• How to rehydrate (soak time: approx. 1 hour): (1) Place plenty of water in a bowl and submerge the fu. (2) Place a drop lid (otoshibuta) on top and soak for at least 1 hour. (3) Gently squeeze out water using both palms, being careful not to crush the pieces. (4) Score the back side of each piece with a cross-cut using a knife so flavor absorbs more easily. Note: If not fully submerged, hard spots may remain — ensure the fu is fully covered with water. You can also make a cross-cut partway through soaking and return to water to speed up rehydration.
