Tanita Shokudo Koji Fukujinzuke is a fukujinzuke pickle made by Tokai Pickles using eight types of vegetables, all sourced from Japan: daikon radish, eggplant, ginger, cucumber, lotus root, perilla, sword bean, and sesame. Shio-koji (salt koji) is used in the pickling process to provide a refined, natural sweetness. Compared to the Japanese Food Standard Composition Table 2020 Edition (8th revision) reference values for fukujinzuke, this product contains 40% less sodium.
