KALDI Mohei's instant miso soup features a live miso (namazaso) base that combines the sweetness of rice koji with the umami of soybeans, drawing out the flavor of three domestic mushrooms: shimeji, maitake, and enoki. The miso is an expert blend of whole-grain miso for a clean finish and smooth ground miso for a mellow roundness, all brought together with a dashi made from bonito, kombu, and shiitake.
